Umm... oops. I just started my 4th week, skipped the rest of last week - as far as logging food goes, that is. Regardless, things are still going well, have booted a good 4-6" away from my waist (the variation stems from which pairs of pants you choose to believe) and have a tonne more energy. It is day 22, I suppose, I've decided to allow myself to go to phase 2 - basically a reintroduction of the carbs I've been missing out on. So I figured I'd go balls-out and eat nothing but bread today. Okay, that was a lie. Breakfast Bloody protein platter. Again. Lunch Spinach Chicken Salad - Caesar Dressing Dinner An embarrassing block of cheese and some turkey. Then some lentils and such while I was prepping for tomorrow's dinner. Tomorrow's dinner menu, since I'm not likely to actually update in a bit is as follows: Salad Baby spinach and tomato with homemade raspberry dressing - garnished with raspberries Main Course Beef tenderloin medallions, ~8oz each, marinated in brandy, olive oil, pepper and lime juice overnight. Will be lightly salted on either side before searing over high-heat, then flamed with brandy and moved to the oven - brandy peppercorn sauce to follow in post-flame pan Side Stuffed red peppers. Stuffing is a lentil recipe I came up with that is reminiscent of a pesto, without pine-nuts (didn't want them to get lost), then topped with portabella mushrooms, toasted pine nuts and a parmesan/romano blend (all fresh). Dessert Baked brie wheel topped with caramelized mango, sautéed in a slight amount of oil, nutmeg and cinnamon; served with pita wedges
